It does not work. The only reason you can use the T-Adapter with DSP games is because of how the DSP chip works. The way the Super FX, SA-1, SDD1, Cx4, etc work will not function with a T-Adapter.

That looks pretty awesome. I'd be interested in trying it out if there was a firmware for the Game Doctor SF series. They tend to be cheaper and more common than the Wild Card series.

The menu might be required to initialize mapper hardware that allows both LoROM and HiROM games as well as multiple games on a single memory. That would be my guess for why the menu is required.
